
It’s not really summer without a good popsicle! I recently have come to realize that orange and mint together are delicious and refreshing, maybe everyone else knew this already, but I was surprised! I think in head I was tripped up by toothpaste and orange juice, but that isn’t at all what fresh mint tastes like in orange juice. It just adds another herby layer and makes them taste extra cool and refreshing. They also make for a super quick and easy popsicle without any added sugar which is my favorite kind. The clementine suns are completely optional, I shaped them into little suns and froze them in the popsicle, but they were only sort of visible and I’m not sure I’d bother next time. They did look adorable held up to the light though!


Ingredients:
- 1 cup orange juice
- chopped fresh mint
- clementines (optional)
- Popsicle molds
Method:
Mix the orange juice and mint and stir well. Let sit for an hour or two in the fridge so the flavors meld.
You can strain the mint out or leave it in, I like it, but I find most kids don’t. (There’s green things!!!)
Pour into popsicle molds and freeze.*
*If you decide to make the clementine suns, add them before you pour the juice in.

If you decide to make the suns, cut 1/4″ slices of the clementine. Cut a slit along one of the segments and peel off the little triangle pieces from the rind.
Arrange the triangles like a sun on a plate (make sure all the pieces are touching and that it will fit in your mold) Freeze.

When you are ready to make the popsicles pop them off the plate with a thin metal spatula and pop into the molds right before you pour the juice in.
Freeze until solid.
