
Garden fairy toast is so simple yet so satisfying to make! It takes inspiration from the classic fairy toast- bread covered in sprinkles, and reinvents it as a healthier and more versatile snack. The premise is simple, you just collect a little bit of whatever looks good in the garden and then artfully arrange it on your toast. It’s fun and easy for kids, and can be quite elegant for adults. It celebrates the garden harvest (even when that harvest is small!) and makes vegetables fun! Ok I always think vegetables are fun… but not everyone agrees with me. You can use cream cheese as your “glue”, or get fancier by using goat cheese or ricotta, or by tinting your cream cheese like a do in my love bird toasts. I consider this an opportunity to let the vegetables sing, so I don’t alter them much, just cut them in half as needed so they don’t roll around. Thus far, I haven’t used anything cooked or prepared (like a pesto) but the swiss chard was speaking to me the other day so I may change that rule. Don’t be afraid to experiment and see what you can create! One of the best parts of garden fairy toasts is they serve as a remeinder of what was ripe in the garden at that very moment. As teh season goes on the toasts will change with it!
Ingredients:
- bread, toasted (any kind you like!)
- Cream cheese (or goat cheese, yogurt cheese, ricotta etc.)
- a handful of fresh veggies, fruit, herbs and edible flowers from your garden
- salt and pepper
Method:
Spread your toast with cream cheese.
Slice anything thick or prone to rolling (like tomatoes or cucumbers) and then play around with arranging things in a pleasing way on your toast.
Top with a little salt and pepper then enjoy!
